Doughnut Vault- Chicago

I am on the way to visit my sister who lives about 3 hours from Chicago. This is my second trip taking the train, and I love it! The easiest way to get to her town is to fly into Chicago-Midway and take the train from Union Station.  It’s now a tradition for me to make sure I have a few hours between the plane and the train so I can discover a little of Chicago at a time.  This time it was Doughnut Vault.  They serve old fashioned donuts in Chocolate, Coconut, Lemon, Buttermilk, and Almond.  I bought three, I couldn’t help it.  The coconut was delicious but  a little sweet for me, the Buttermilk was perfect.  If you find yourself near Union Station it’s about a ten minute walk, not far at all.

Seriously though, the buttermilk! Mmmmm!!!  I have already devoured it but I am thinking I might need to make another stop on my way back.  What I also loved about it was the hidden location, I mean, it’s not really hidden, but it’s tucked away inside a building, which I don’t the name of.  I loved the atmosphere and the little vintage chairs, the fresh smell of brewed coffee, and the free wifi.   Yes, I will be back Doughnut Vault!  I will!

Anxiety at the Airport and Lisbon

It seems I never can make it to the airport without being stressed, so I tend to get there really early. Even when I get to the airport with plenty of time, there is a certain amount of anxiety that follows me. I don’t dislike flying, but it’s not my favorite thing to do, even though I love LOVE traveling. I’ve missed quite a few flights because of anxiety, so in order to feel better, sometimes I get to the airport ridiculously early. That’s ok though, because I am not rushed, and not being rushed cuts down on some of those anxious feelings. Today, I am at the airport, with 2 hours to spare. I had plenty of time to stand in line at Chic-fil-a, and when my cashier went to the back to get cups, and took at least 5 minutes, she was so very apologetic and I was smiling, not in a hurry at all (when most people around me were tapping their toes and glancing nervously around). After breakfast I have time to get some Starbucks, and attempt to quiet my mind.

Maybe I am little silly for being so early. But today, it has given me some time to go through Europe photos. I forgot about that little trip we took from Lisbon to Costa da Caparica! How could I forget? We rented bikes at the crack of dawn, biked to the fairy (45 minutes) and after a 30 minute fairy ride we biked another 45 minutes to the beach. Lisbon in itself is simply magical, but the added bonus of being close to beautiful beaches, makes it an unforgettable destination.

Let’s Juice! Green Apple Lemonade

A few months ago I decided to go sugar free! I lasted on a strict sugar free diet for 6 whole weeks…and then Starbucks happened, and then it happened again. And then again (sigh). I can’t tell you how hard I am working to quit sugar all together, but all around me are distractions. A few of my favorites, that have derailed me the last month are Green Tea Lemonade and the Coffee Frappe from Starbucks, chocolate cake from the Cake Bar, and dark chocolate. It’s hard to turn down any of those things.

But I am back on my strict no sugar again! Due to some horrible news I had from the dentist. I will share how I am trying to heal my cavities in a future post. But for now here is my favorite juice that is SO good for you, and reminds me of Starbucks Green Tea lemonade, without all that sugar! Enjoy!

Recipe:

2 Green Apples
1 Cucumber
1 lemon
1 1/2 cups water
2 tbs raw honey

Juice the apples, cucumber, and lemon. Mix in the honey, then the water. Add ice, serve, and enjoy!

You are the Apple of My Pie: Emporium Pies

Today I went to Oak Cliff, I’ve been wanting to check out Emporium Pies for sometime now.  On a recent trip to Austin I discovered a really cute pie place with some friends, but wasn’t hungry while there. Being there put me in the mood for pie, so I decided upon returning to Dallas the first thing on my list was to get pie, but not just any pie.  So here I am. Luckily for me, I got to Emporium before the line was out the door.  Apparently when the weather is nice and its the weekend, Emporium is the hot spot!

I didn’t have to wait long for my pie though.  There were several to choose from, including a deep dish apple pie which looked heavenly!  I chose Merry Berry, which made me “berry” happy.  I don’t like things too sweet, and this pie had just the right amount of tartness for me.  The crust almost tasted like a flaky sugar cookie! And of course I chose to have it with ice cream, because “local, organic, home made, vanilla” sounded too good to pass up.    Please go try an Emporium pie soon, you will eat every bite and thank me for it.

Further down you will see some photos of the inside, it has a cute farm house style.  Also they serve Cultivar Coffee, the best coffee in Dallas.

5 Yummy Brunch Restaurants in Dallas

I have heard that most New Yorkers enjoy brunch, and I believe it.  Last time I visited NYC a question I got asked eluded to the fact that I might not appreciate brunch like New Yorkers do.  So I am going to dispel a few myths about Texas.  Not all of us wear cowboy boots, drive trucks, or speak with an accent.  Most importantly, at least in Dallas, we also enjoy a good brunch!  In fact, I can’t say this is true for all Texans, born and bread, but my absolute favorite meal of the week is brunch!  No weekend is complete without it!

With so many restaurants that serve unique brunches in Dallas, I’ve lived here over 5 years and still haven’t tried them all!

Here are 5 of my favorite brunches in no order because I loved them all equally:

Vagabond Greenville Ave

If you are an Eggs Benedict fan then try the Eggs Benedict Grilled Cheese.   It’s Heaven, and I am dreaming of it right now! Have a $2 Mimosa, unlike most places, it’s not in a tiny glass with a sip of champagne, one glass was enough for me.

Sundown at Granada Greenville Ave.

My first time having brunch at the Sundown was a couple of weeks ago, and I am dying to go back and try one of the Frittatas, which I heard are amazing.  The Greenville Ave. Benedict is so unique and literally bursting with flavor. I love a classic Eggs Benedict, but the BBQ Hollandaise sauce combined with the Swiss Chard and mushrooms, even now makes my mouth water.  It’s scrumptious, and should be coud be called the Texas Benedict, it’s complete with sweet potato hash browns which really are perfectly crisp on the outside but not greasy.

Jonathan’s Oak Cliff

If you love a Bloody Mary, then make yourself the perfect one! One the weekends Jonathan’s Build Your Own Bloody Mary Bar should start you off right!  My favorite thing to get there is the Chicken and Waffles.  Hands down, it’s the best Chicken and Waffles I’ve tried in Dallas.

Ascension Design District

For a while now I’ve loved Ascension for the atmosphere and unique events, but recently found out I love their brunch as well!  Not only do they have great coffee and a great Chai Latte, but their brunch menu is so yummy.  The Ricotta Hotcakes (pictured at the top of the post) are simply perfect.  I am not a huge fan of sweet dishes for breakfast or brunch.  The Ricotta Hotcakes are just sweet enough, but I hardly feel like I had dessert for breakfast.  I could eat them every week! Also be sure and order the Mamamango to drink.  Is it the weekend yet?!

Company Cafe Lower Greenville Ave.

I’ve loved Migas since I first tried them in Austin more than 10 years ago.   Migas are made with scrambled eggs, and fried tortilla strips, it’s all mixed in together with salsa, cilantro, sometimes some good veggies or chicken.  The best migas I’ve tried in Dallas so far are from Company Cafe.  I don’t know what they put in the sauce but trust me it’s good.

Velvet Taco Knox/Henderson

Ok, this really isn’t a brunch place, but I had to put it on the list because their breakfast tacos are just that good!  I am in love!  There are three breakfast tacos, and they are served all day.  So really any time you want to have brunch, you can!  It’s also the perfect place to go  if you just need a less expensive breakfast.    My favorite of the three is the Bacon, frittata taco but the Pork, chilaquile taco is a close second.  Who wouldn’t want to start the day off with a breakfast taco and a Margarita?

5 Things You Learn from Traveling Solo

Too Many Ideas and Not Enough Time

It’s been almost three months since my last post!  I thought this day would never come. But it’s that time of the year, when teaching has started picking up, and I am drinking more coffee than ever to stay awake. Hence, I think that coffee has put me on over drive. It’s a good thing. I am being productive. I have a feeling, though, I am going to crash this weekend (but what’s new?).

Does anyone else have a crazy million ideas hit your head if you’ve had too much coffee?  It happens to me every time.  Random blog posts fill my head, as well as recipes I haven’t tried, trips I need to plan etc.  Not only that, but I start to think of things I want to learn and start making lists like (random): I want to learn to sew shirts, I need to start a YouTube channel, I want to create a recipe no one has ever created, I need to buy outfits to do photoshoots, I want to write songs and record a demo, I need to learn French, Korean, and practice Spanish (maybe Sign Language??)!!!  (I possibly spend too much time on Pinterest and Bloglovin’.)  Alas…I leave work, get home, destress by sitting on the couch with a good book (aka, pajamas and Netflix), and one by one, all my ideas slowly drift off into the air, out of my head, till my next cup of coffee.

I don’t know if anyone else has this problem or if this is just something  that is wrong with me.  Why do I never start or finish any  of those projects/ideas?

My Experiences Traveling Solo

Which brings me to today, finally I am starting and hopefully finishing a post I’ve wanted to do for awhile.  I would like to share some experiences I’ve had with traveling alone.  It seems solo travel is a popular subject that bloggers have definitely already covered. Everyone’s experiences are different and there are always pros and cons. But even with the bad (getting lost) there is always good (learning your way around, meeting new friends).

My First Solo Trip

  My first solo trip was when I was 17. I drove my car from Texas to Arkansas and stayed a couple of weeks in a city. Even though I was staying with friends of the family, there was no one my age and I was free to come and go and explore on my own.  I saw a movie by myself for the first time, and I enjoyed it.  No one gave me weird looks. No one noticed I was there by myself.  Even though I only stayed for a few weeks,  I realized I loved exploring the small town by myself. The drive home was 7 hours. That was the longest I’d driven anywhere alone. I didn’t want the drive to end.  It felt like a huge accomplishment.

My First Solo Trip Out of the Country

After college I moved to Costa Rica to study Spanish.  When I first moved I was armed with two years of college Spanish, and a couple of months at a language school in Texas.   The truth was I barely knew enough Spanish to have a simple conversation, but just enough to get myself into a fair amount of trouble.  I remember a resturaunt that looked particularly good and was excited about trying it (especially after rice and beans mostly every day).    The veggie pita with hummus looked particularly yummy…but somehow I got a Falafel pita and no hummus.  The first time I was mildly disappointed and discovered something new,  I hate Falafel.  No worries though, the next time I would order that Veggie Pita!   The next time I would be sure and say it correctly.  But the next time I also somehow got Falafel.   It’s embarrassing to say, I tried a third time and never got to try that veggie pita with hummus.  I still sometimes wonder what it tastes like.IMG_2607 copy

Another time I ended up near the ghetto of Costa Rica because I thought the girl who invited me was talking about a beach resort, when in fact she was talking about her home town.  She took me to a carnival that evening when we arrived (after an 8 hour bus ride) where most people were stoned or drunk. I didn’t know enough Spanish to tell the girl that this really wasn’t my thing.  I left early the next day but there were landslides and the busses got stuck so I got back to the San Jose bus station really late at night with barely an idea of which bus to take (I had only made the trip before by relying on my host). The San Jose bus station is scary in the day time, so I was slightly worried when I arrived at night.  But making it back to my home stay was exhilarating.  Finding your way is a true confidence boost.  Of course I encourage people to navigate in the day time and be prepared.  This was before cell phones were really cheap, and I took my Costa Rica guide book with me every where I went.  It was a life saver at times.

Five Things I’ve Learned Through Traveling Solo

So here are the 5 things that stick out in my mind when I think about what I’ve learned over the years of solo traveling.

1. Confidence– I grew up a shy kid who hated talking to strangers.   I now have friends all over the world.  Traveling alone is a great way to meet people.  People all want to connect.  Being alone forces someone shy, like me, to reach out and connect to people I would have never talked to had I been with a close friend.  Figuring out your way around a brand new place and realizing that you have the skills it takes to do something like that, it’s empowering.

2. Self Enjoyment– I don’t always talk to myself out loud, but the converstations I have with myself when traveling and making decisions on my own, well, it’s a great way to understand yourself more.  If you can learn to be content alone and enjoy yourself, then it’s quite possible that you can learn to get along with anyone.

3. Friends– I can’t count the amazing friendships I’ve made over the years.  I still keep up with them!  I don’t really think of Solo Travel as being alone, because I meet more people when I travel then when I am at home working.

4. A love for different foods– I still hate Falafel, but I love Plantains, Yucca, Mamonchinos (Lychee), Passion Fruit,  Duck (this is a new obsession, thanks to the many places in France that serve duck),  and Italian food (truth, I’ve never loved Italian food, until I had Gnocchi in Italy!).

5.  Flexibility– Things can and will go wrong.  Life isn’t perfect and neither are decisions. Sometimes the best decisions are spur of the moment, and sometimes carefully planned decisions can go horribly wrong.  When a problem presents itself, being able to stay calm and think through it will put you on the other side, and well, that’s life. IMG_6480 copy

Around San Pedro, Lake Atítlan, Guatemala

Some people pay a lot of money to visit exotic places and to experience serenity and beauty in nature.   Maybe that’s why I felt extremely lucky to have ended up in Guatemala at Lake Atitlan. Not only was my trip inexpensive, I still consider it one of the most beautiful places I’ve ever visited.  From the people and culture to the crystal blue waters and the amazing hiking. If you are considering a trip t Guatemala, don’t miss Lake Atitlan!  From Guatemala City Airport you can take a shuttle to Lake Atitlan. When I went I was actually staying in Antigua. Antigua is about 45 minutes from the airport and Lake Atitlan was around 5 hours from Antigua.  I think it was around $10-$15 for a shuttle from Antigua to San Pedro, though it might be a bit more now. Not bad for a 5 hour trip!

The welcome center here is where all the little boats (lanchas) actually drop you off. You ride a boat from where the shuttle drops you off by the lake in order to get to San Pedro.  I don’t remember how long the boat ride took, because I was too busy looking at the scenery (at the longest it was 30 minutes maybe). I remember it was pouring buckets when we arrived, but the people where waiting for us and there were tuk-tuks ready to whisk us away to our home-stay.

The town is very small and you really can walk everywhere in less than 10 minutes.  There are quite a few hills though and when you arrive you might want to grab one of the little cars (tuk-tuks).

There is a ton to do. From Hiking the Indian Nose, to boating across the lake and visiting other little towns around the lake. There is a market in Santiago, there is yoga in San Marcos (as well as San Pedro). The food in San Pedro is delicious and inexpensive. Take some Spanish classes and Salsa dancing while you are there!  There is also kayaking and horse back riding. If you have time you can take the bus to one of the coffee farms for a short tour and coffee tasting. If you love coffee or just enjoy being outside and learning, it’s a must. This picture is a little random but the Spanish school I stayed at had quite a few teapot towers.  My roommate and I fell in love with them so much when we returned to the states we built our own teapot tower.
