Tips for The Single Cook

It’s not easy buying groceries for one. It’s not easy cooking for one. I have learned a few things over the years though, so I wanted to share a few pieces of advice with those happy go-lucky singles out there.  You know who you are.

*Eating out is ok, but if it’s expensive make sure to take the left overs home and eat them for lunch the next day.

*Have three go to meals, (that you don’t tire of easily) and memorize the recipe (mine are Taco Soup, Chicken Enchilada Soup, and Green Curry)

*Be ok with eating the same meal twice or three times a week

*Memorize a couple smoothie recipes that you can make in the mornings (get your nutrition!)

*Get a few bowls with lids that you can store leftovers in the fridge (I chose some pretty ones that make leftovers look good)

*Have one day where you cook, mine is Sunday evening because I am usually not to busy and I’ve had a chance to rest

*Don’t stock up on fruits and veggies, buy a few of what you need, they go bad with only one person eating them, instead it’s ideal to live close to a grocery store so you can make a couple trips a week, or stop on the way home

*Don’t buy a 1/2 gallon of milk, unless you drink a lot of milk.  I buy a quart size that last me almost 2 weeks unless I have company (thats about as long as its shelf life).

*write down anything that works for you and please share!!

Here is how it works for me, the reason I have a few recipes I memorize is because I normally am too tired to dig through recipes when I am on my way to the store from work and I know there is nothing at home to eat. Usually I don’t want to go home before going to the grocery store, because if I do, then I won’t go.  So my go to recipe is Taco soup or Green Curry.  A variation of my taco soup, a little bit easier version, is Chicken Enchilada soup. Memorizing just makes things easier all together. When you are at the store and you know what you need for a particular meal without looking at a piece of paper, the shopping goes faster, and the faster the shopping, the faster you can get out of there, and the faster you can get home and make dinner, and sit down to watch Netflix.

Chicken Enchilada Soup:

Boiled or baked Chicken shredded, 1 can of corn,  1 can of black beans, 1 can of diced tomatoes, and 1 can of chicken broth

Directions: Throw everything in a pan and heat on the stove till hot. Add pepper and salt to taste, add chips, cheese, cilantro, and avocado if desired.

My go to meals usually just involve chopping and heating.  They are easy, require no thinking, can be made in 30 minutes or less, and makes enough so that if I run out of microwave meals, or don’t want to eat out for lunch I normally can fall back on the meal I made on Sunday.  Also, my go to meals change, but they are always easy, but require more than say, making a sandwich.  I am actually a picky eater, but believe it or not, eating the same meal three times a week is really not that bad and can save some money later.  So what I like you may not like, but it shouldn’t take you long to figure out what your go to meal could be.  Once you do, keep that recipe with you till you memorize it. Vitamins and a Chicken

I’ve started this post 3 times now and somehow have managed to lose each post. So hopefully this post I don’t lose and have to start over again. The other day my mom gave me a chicken. I’ve never cooked a whole chicken before. I am excited to try. I am so excited that I put it in the crock pot this evening and I am going to wake up at 4am to check and see if its done.

I cut up garlic, onion, lemons and put them in first. Then I added the chicken and drizzled with olive oil. After that I added more lemons, garlic, and then sprinkled black pepper, everyday seasoning from Trader Joes, and some ginger root (why the heck not?).

 

 

On a completely different subject. I decided that I need help growing my hair out so I picked up some vitamins at Whole Foods. I love the Prenatal gummy ones!! I hate swallowing round tiny hard objects, so the less of those the better. Whole foods didn’t have a hair and nails formula in a gummy form, otherwise I would have tried it instead. This is my 8th post out of 30 posts in 30 days. 22 more to go!

The Headband

I am getting a “head” start today on my 30 days, 30 posts challenge. That said, I love hats and headbands.  I do.  I am not going to turn this into a fashion blog by any means, but I wanted to give credit to the headband today.  The reason I love headbands, is because sometimes I can’t figure what necklace goes with an outfit.  But it seems to me a sparkling headband can make any outfit complete, well almost any I guess.  I also have to mention my Steve Madden boots I recently bought at Marshalls for $50.  I have a feeling they will get quite a bit of wear and tear over the Spring and Summer this year.

Why I Want to Move to Guatemala

20140222-232901.jpgIn Lake Atitlan, Guatemala, time doesn’t stop, but it does seem to float instead of fly by. For a number of reasons Guatemala is one of my favorite Central American countries. Time seems to preserve the culture there. Time takes a seat on an old school bus decorated in bold colors. It teaches students to type on outdated type writers, it gathers and cooks fresh vegetables, and it takes pride in handmade colorful garbs. Culture is mostly preserved away from the city, so it’s worth traveling to areas like San Pedro by Lake Atitlan. Its views if you are into hiking are breathtaking. If you aren’t as fit and would rather eat by the lake or take a simple walk it is equally as beautiful. The food is wonderful, and the people are friendly.

As a teacher living in a fast paced country where 30 minutes for eating lunch requires one hand for food and another hand for a stack of papers to be copied, memories of summer vacations spent in Central America get me through the rest of the year.

I like taking the time to do things well. Rushing about to make things happen while it keeps me occupied, doesn’t seem the best way to live. Yet here we are America, living a rushed life and teaching our children to do the same. We busy ourselves and we busy our children. I heard a quote at a recent educator training, I don’t remember the exact quote but it was something like children growing up now are talked to less than any other time in human history. Hmmm…maybe in America. And I do believe that the quote isn’t far off. But it seems in the sleepy town of San Pedro Guatemala, plenty of conversation is happening, and parents have time to talk to their children.

Basically my training I went to was telling me I now have the job of teaching children to have a conversation, which I actually think is brilliant, and also extremely sad. The idea that teachers are a last resort for teaching a child everything is just sad to me, and I am not being sarcastic. But I do believe there are amazing parents. I believe they make time to talk to their children. I know also though, that there are parents that are just getting by, and maybe it’s a single parent home, and there isn’t time to talk to the kids, work and providing take precident. I understand we live in a broken world. I don’t however believe teachers are the answer to everything. I hope one day parents can be more informed, because as good as the teachers are that I know, they are one adult to 22 students. Everyone should know that it takes a village to raise a child, not a teacher, and definitely not an institution. As hard as education tries, it will never be able to replace what a child so desperately needs, and that is parents or a parent that gives the child the attention he or she so desperately needs. OH but wait!!! This wasn’t supposed to be a blog about education and parenting. I realize I completely lost track and rambled on, and after rereading, it’s evident I should save this for another blog, but I am too lazy to do that now, so maybe later I’ll edit it. So so so sorry!! Back to beautiful photos of Guatemala. *Sigh.

Bath Time for Pooch

“No no no, I was afraid you were doing this again, you’re not going to put me in there?!!”

I like to imagine my dogs having little voices.  Surely I am not the only pet owner who does this.  Many of my friends make fun of June bug because his eyes seem to bulge right out of his head most of the time, which kind of makes it seem he is either anxious or excited about everything. He is a funny little dog, and gets into a lot of trouble, mostly because he is not so smart.  But what I love about him is he is no fuss.  He doesn’t wine.  He wants to do the right thing, and he loves to cuddle.

Both Holiday and June Bug are socially awkward, in the worst way, and only with other dogs.  They are great around people but can’t quite seem to chill out when there is another dog around.  So this makes taking them for walks or to the dog parks quite frustrating for me.  June Bug wants to attack other dogs, Holiday could care less but seems to side with June Bug on which dogs to trust and which dogs not to trust, even if that dog is a cute little schnauzer puppy.

The other day at the dog park they reacted very poorly to a man and his little schnauzer puppy. She had two tiny pink ribbons in her hair, a pink collar, and looked like she stepped out of “Dazzlin Pouch” Magazine.  I am quite sure she had just come from the puppy salon, looking all fresh and fluffy.  I guess June Bug doesn’t put up with fluffy because he tried to eat her face.  Poor little schnauzer squealed when he attacked her.  Needless to say the owner and schnauzer did not stay long at the park.  I could see her relief as she pranced away, her feelings hurt that another dog didn’t like her.

I wish there was a way to make dogs apologize for bad behavior. June Bug would have a long list of apologies to make.

On another note, I am doing my best to meet my goal of 30 posts in 30 days, I am seriously hoping I write more interesting things, but I had nearly forgotten about the goal tonight and at 11:22 I am just making that deadline I set for myself.  So a post about my puppies was all I could come up with at this point.  Have a wonderful evening and a fabulous weekend!

Mighty Migas!

My brunch food of choice for what seems like years has been eggs benedict.  It doesn’t matter how many times I have it, it makes me happy.  A few weeks ago I took a trip to Austin with some friends.  We had brunch on South Congress street.  They did not have eggs benedict, but they did have Migas.  I have had Migas before, actually the first time I had them was in Austin probably around 10 years ago and I remember falling in love.  But my passion for eggs benedict quickly took over, and migas were forgotten. I think mainly it was because other than Austin, I am not sure I’ve been any where that serves them.  Eating them again for the first time in years made me realize I’ve been missing out.  So I have taken a break for awhile from eggs benedict and replaced them with migas.  I figured it couldn’t be too hard to make them, after all with eggs and tortillas, not much can go wrong, throw in some salsa and you’ve got a meal worthy of brunch time.

Here is pretty much everything you need: cheese, salsa, onion, green pepper, eggs, avocado (if desired, and it should be), garlic tomatoes, and olive oil.

I start by gathering all the ingredients I want to chop, and to be truthful I don’t really measure.  I chop some garlic and onion and the tortillas and throw them in the pan with some olive oil ( and a little salt and pepper).

I let the tortillas fry until they get some nice color. This means they will be a little crispy, which for me gives the migas their texture.

After the tortillas are done I add the eggs and scramble.  Then I mix them together, then I add the peppers and tomatoes. I stir everything together for a while to sit for a couple minutes so that the tomatoes and peppers get hot. Finally I top it off with a bit of cheese and immediately remove it from the pan.

And here it is all yummy-fied!!

Oh! I forgot to say, I love cilantro!!!  It’s the best part! So if you love it too, add it and some avocado and salsa on the side.  I am now wishing it was breakfast time and not time to sleep…I might need a snack before bed.
